Bak choi, paak choi, Chinese chard cabbage and Chinese mustard cabbage

Nutrition:
Bok Choy contains no fat and is a great choice for getting lots of vitamin C, calcium and vitamin A. Bok Choy also contains glucosinolates, which may prevent cancer.

Taste: 
When cooked, it has a sweet flavor and its stalks are firm.

Uses:
Because bok choy is a member of the cabbage family, you can use it as you would a cabbage.

Substitutions:
Can be substituted with cabbage or other members of the brassica family.

Storage:
Bok Choy should be stored in the refrigerator wrapped in a damp towel and then placed in a plastic bag and will keep for one week. Do not let the leaves dry out.
