Nutrition:
Tatsoi
is
high
in beta-carotene and Vitamins A, C, and K; they
also have good amounts of calcium, potassium,
phosphorous and iron.
Taste:
Tatsoi
has
a
sweet, earthy, mustardy taste. Its stalks are sweet
and almost creamy. The texture is similar to mache,
but much heartier.
Uses:
Can
be
eaten raw in salads, usually in mixes, or cooked or
stir-fried.
Substitutions:
Spinach,
kale,
mustard greens.
Storage:
Tatsoi
should
be rinsed and then spun or patted dry and kept in
the vegetable bin of your refrigerator.
