The
fresh
cucumber is a very good source of the vitamin C
and the mineral molybdenum. It is also a good
source of vitamin A, potassium, manganese, folate,
dietary fiber and magnesium. Cucumbers also
contain compounds called sterols, which have been
shown to lower cholesterol in animals. The
heaviest concentration of sterols is in the skin
of the cucumber, so you shouldn't remove the peel
before eating.

A
cucumber is mainly very watery and juicy and the seeds
give it a hint of freshness.
Uses:
Cucumbers
are
mainly eaten raw in salads, sandwiches or as a
garnish. Make sure to leave the skin on.
Storage:
Store
in
a plastic bag in the refrigerator. Try to use
within 5 days.
