Green
beans
are loaded with nutrients — an excellent source of
vitamin K, vitamin C, manganese, vitamin A,
dietary fiber, potassium, folate, and iron. And,
green beans are a good source of magnesium,
thiamin, riboflavin, copper, calcium, phosphorus,
protein, omega-3 fatty acids and niacin.
Taste:
Green
beans
have a mild flavor, slightly sweet but it is the
crunchy texture that pulls you in. Try not to overcook
green beans, you'll lose the crunch.
Uses:
Can
be
eaten raw, lightly boiled or stir fried.
Substitutions:
Other
types
of
beans, in a raw dish green peppers can be used to
replace green beans.
Storage:
Store
in
the refrigerator. Try to use within 7 days. Excess
beans can be blanched (2-3 minutes in boiling
water) and then frozen.
