There
are
several varieties of kale; these include curly
kale, ornamental kale, and dinosaur (or Lacinato
or Tuscan) kale.
Nutrition:
Kale
is
considered to be a highly nutritious vegetable
with powerful antioxidant properties; kale is
considered to be anti-inflammatory. Kale is very
high in beta carotene, vitamin K, vitamin C,
lutein, zeaxanthin, and reasonably rich in
calcium.
Taste:
Has
a
taste much like other brassicas with a green earthy
flavor.
Uses:
The
entire
leaf
may be eaten raw or boiled or sautéed lightly until
the leaf becomes a bright green.
Substitutions:
Other
family
members
such as collard greens.
Storage:
To
store,
place kale in a plastic storage bag removing as
much of the air from the bag as possible. Store in
the refrigerator where it will keep for 5 days.
The longer it is stored, the more bitter its
flavor becomes. Do not wash kale before storing
because exposure to water encourages spoilage.
